[04/05/2013] Full steam head within 6 hours. Fantastic smell!

[22/06/2013] Forgot to dry hop. Better late than never. Have just added them now.

We have had a good run with the stout mash kits so we decided to give this one a go. [HBC Dunkelweizen Mashkit (23lt)]

[22/05/2013] Used a starter. Good early signs. Due to the poor OG we need a good quality ferment.

General Comments:

[25/03/2013] Going to make one batch of wort but then split into a bigger and smaller batch of beer using the US-05 and Andrew’s ‘Go To’ yeast.

[22/04/2013] The us-05 finished at 1.01, and Andrew’s go to finished at 1.007. So 5.5 and 5.9. Big difference on the colour and taste. mid-range carbonation.

General Comments:

[12/12/12]First attempt at BIAB. Very smooth brew no issues really.@23:30 Mash was 1.058 which seemed ok and would indicated efficiency of about 70%.

[13/12/12]@7am Despite some concerns about the yeast we are off to a good start. Looks like it only took a matter of hours to get going.

[14/12/12] krausen has dropped down, seems quite quick…

[15/12/12] Steady 18c, have put on the brew belt to make sure the temp stays up now that the primary fermentation is tailing off.

[18/12/12] 1.020 Racked to the carboy and moved to Owen’s nice warm apartment. Green taste nothing special at this point. Lots more gravity points to drop and conditioning to happen yet.

[24/12/12] Still sitting happily in carboy at 21C, no visible activity, lots of trub. Nice complex floral hop smell.

[30/12/12] Just under 15ltrs bottled, great smell and dry taste
